I'm doing WHAT?


Yep, I'm doing Roller Derby. Most of you (that are facebook friends at least) know that I am now playing RD for the Spartanburg Deadly Derby Dolls! I am so excited to be doing this. The girls on the team all rock and our coaches are great!!!! My name is going to be Porcelain Brawl (grrrr I'm tough :)) and I am going to rock this....once I learn how to be fabulous on skates that is haha. Seriously though, everyone is awesome on the team! Sunday we have a photoshoot and I CAN'T WAIT!! I have some seriously awesome ideas for my makeup. It's going to be great!!!

If I was trying to impress a man...

I would make the meal that I made tonight.  It's the kind of food that I feel like would impress a man. :) The Pioneer Woman is a genius. She really is. Marlboro man must eat amazing every night! I made the ranch style chicken and boy was it yummy! I was kind of impressed with myself actually...I mean it was just THAT good. I wish I had taken a picture of it when I finished making it, but of course I forgot. For dessert I made homemade blackberry cobbler. Yes, be jealous of the meal we had last night. Here are the recipes.


RANCH STYLE CHICKEN (Copy and pasted from HERE)

Ingredients

  • 1/2 cup Dijon Mustard
  • 1/2 cup Honey
  • 1/2 whole (juice Of) Lemon
  • 1/2 teaspoon Paprika
  • 1/2 teaspoon Salt
  • Crushed Red Pepper (optional To Taste)
  • 6 whole Boneless, Skinless Chicken Breasts
  • 1 pound Thick Cut Bacon
  • Bacon Grease
  • Sharp Cheddar Cheese, to taste
  • Canola Oil

Preparation Instructions

To begin, make the marinade. In a large bowl mix together ½ cup Dijon or country/grainy mustard with ½ cup honey, juice of ½ lemon, ½ teaspoon paprika, and ½ teaspoon salt and whisk until smooth. Sprinkle in some crushed red pepper flakes or cayenne if you like things a little spicy. Set aside.
Next, rinse the chicken breasts, place between two sheets of waxed paper and pound to around ½ to ¾ inch thick with a mallet. Next, add the chicken to the bowl with the marinade, cover with plastic wrap and place in the refrigerator for 1 to 3 hours.
While the chicken marinates, fry up some bacon. When finished cooking, reserve ¼ cup of the bacon grease and clean out the skillet.
When the chicken is done marinating, preheat the oven to 400 degrees. Remove the chicken from the fridge and pour off excess marinade. Heat half of the reserved bacon grease with an equal quantity of Canola Oil in the clean skillet over medium-high heat. When the grease is nice and hot add two or three pieces of chicken to it. Cook until brownish/blackish, about 1 to 1 ½ minutes per side. Remove chicken to a large baking sheet. If cooking many pieces of chicken, repeat skillet process and remove finished chicken to baking sheet. Place chicken in preheated oven and cook for about 10 minutes. Remove from over.
Lay a few pieces of bacon over each chicken breast. Sprinkle shredded sharp cheddar cheese over the top of the chicken as generously as you like. Return pan to oven for an additional five minutes until cheese is melted and bacon is sizzling. Serve immediately.

Now, here is a pic of my yummy blackberry cobbler! We got these blackeberries from the backyard since we have wild ones that grow every year. Yum!
I used a Betty Crocker recipe for this and you can find that one RIGHT HERE. It was delicious and sweet and juicy and I could go on forever, but I won't. :)

Coconut Pancakes

Yesterday I wanted to make pancakes for breakfast. I was just going to make plain jane boring
pancakes, but then I saw that I had a bag of coconut in the freezer when the brilliant idea hit me. COCONUT PANCAKES! Yes, I know they sound delicious. They really are! I searched really fast on my phone for a recipe and I found THIS recipe from Served with Love. I didn't follow the recipe exactly, so I will give you my version. :) Also, when I make pancakes I don't really measure, so I will do my best to make it accurate.

Ingredients
1 1/2 C flour
1/2 can sweetened condensed milk
1/2 C 2% milk (more if too thick)
1 egg
1 TBSP sugar (original called for 2, but with the sweetened condensed milk, it wasn't needed)
1 TBSP baking powder
dash of salt
1/2 cup shredded coconut ( i used sweetened)

Sift together flour, salt and baking powder. Stir in sugar and coconut.

Whisk egg with the sweetened condensed milk and 2% milk. Add to dry ingredients and beat until smooth. If too thick, add a little more 2% milk.

Now, cook your pancakes. :) I think this made about 12 smaller pancakes for me.

No syrup is needed, but because I am a little obsessed with sweetened condensed milk, I drizzled a little on the top and threw on a little shredded coconut. I wish I had gotten a picture, but take me word for it. They were beautiful and delicious!

Fourth of July weekend!

Every year (well almost every year) I go to the beach with my family and a few friends. We always stay in Edisto Island, SC. It's a quite little place, but we always have a good time. This year was no different. Me, my mom, dad and Murray drove down on Friday afternoon. Once we got to Charleston, my friend Nicole who was going to meet us in Edisto told us she didn't know how to get there from her house in Charleston, so my parents dropped me off with her. We finally got there later that night and met up with everyone else at the house. We just hung out Friday because it was late when everyone got there, but we did get surprised with awesome cornhole!

Yeah, it was awesome. Be jealous. Even though I am a botchi ball champ, I am not so fabulous at cornhole. Oh well. I guess I can't be "winning" at everything in life. :)

Murray was my little beach bum all weekend. She absolutely loved it, unlike me who hates the sand and water at the beach! Here she is doing a little pose. What a ham!


I love this bathing suit. In fact, I love it so much that if I could find one for adults I would buy it for me. Anyways. Saturday we went and ate at a gas station in Yemessee. Yes, I did say a gas station. It was weird, but so good! It was called Harold's Bar & Grille. They say they can't sell you food, so they sell you the plate. Weird, yes. Tasty, yes. Later that night after almost everyone else went to sleep, Nicole, Matthew and I built a card house. It was a great card house until Murray knocked it down the next morning. Just look!


It was Elmo's castle. It was so intense building that. Not even kidding. We didn't breathe looking at it; we didn't speak. It was fabulous. Monday we watched a flyover at the beach and we saw these amazing people. I am doing this next year. I just love crazy patriotic people like myself!


Monday night I went to Charleston with Nicole, Emily, Matthew and Anna. We went to eat dinner and then we went to Patriot's Point (the USS YORKTOWN) for fireworks. The East Coast Party Band played and they were so good! We danced until time for fireworks and had such a good time! After the fireworks were over and we danced a little more, we decided to hit up downtown and go to Kaminsky's! Kaminsky's is an amazing bakery that stays open real late, for those that haven't been before. While we were in there enjoying our late night snack, Matthew asked me what would complete my favorite holiday. I told him that dancing with a military man before the 4th of July was over would be fabulous! He said that if I do this, then I would win the game we had going on (to dance with the most random men). Now, at this point in time it was 11:42pm, meaning I had 18 minutes to do this. To be honest, I did not think that this would be possible. How the heck was I going to meet a military man in the middle of the street at 11:50 pm on a Monday night?!? Time was running out really fast, but I kept on. I was about to give up at 11:57 when I saw a guy and I thought in my head "HE'S MILITARY!!!!" So, I asked him "Do you happen to be in the military?" The look on his face was priceless. I wish that I had a picture of it. He said "Yeah" with a really confused look on his face, but he smiled anyways. I asked him what branch and he said Army, so I was like YES!!!! Epic win for me! I explained to him that I had to dance with him for 5 seconds to win a game and he was like Sure! Haha! So, I asked him what kind of dance he wanted to do and he said IDK. Well, time was wasting away so I just broke it down with the boy! It was pretty amazing and I won the game. More importantly, I danced with as hot Army boy on the 4th of July. Please tell me how it could have been better!!! :)

Happy Tuesday!





I love to color my hair. I get SO bored with it staying the same all the time so I just have to change it up somehow. I have had dark hair for a while now, but a couple months ago I decided to get it lightened up a bit since it was summer and I was starting to miss my blonde hair. Well 2 weeks ago I started getting the urge to do something to it again. Then, I got the fabulous idea to put red streaks in it!! Yeah! I found this beautiful red by Manic Panic called "Red Passion." I couldn't put too much in because of work, and it's a good thing I didn't! Red passion ended up being a party of pink in my hair. Now, don't get me wrong because I LOVE it, I just was expecting red. It looks pretty awesome if I do say so myself. So last week I decided to add a few more streaks since I was off for a few days, thinking that it would fade some before I had to work yesterday. Well, it didn't. it still is pink and fabulous. :) Luckily my managers didn't say anything, except one told me my hair looked cool. Ha. Right on! Since I'll be off for a while around the 4th of July (which I can't wait for my favorite holiday!!) I think I might add some more! Woot Woot! I need to get a good picture of it now I can post it on here!

In other news, I have 2 blogs for you guys to follow! The first one is my brother's blog. He is doing an internship in Honduras with some missionaries for the summer. He has a blog so we can stay updated as much as possible with what he is doing. You can check that out HERE! Keep him in your thoughts and prayers while he is gone.

Second, my girl Edelis has a blog about life with twin girls and a drama queen (as she says :)). We met online at a mom's website when we were both pregnant. Her twins and Miss Murray are the same age. So take a look at her BLOG and follow her! Tell her I sent ya :).

Feel Good Friday!

This past weekend I was in DC for Memorial Day, which was awesome. For a patriotic person like me, there is no better place!!! We went to the National Memorial Day Concert dress rehearsal and it was soo good! Kris Allen sang "God Bless the USA" and it was so awesome seeing him thank the troops! The year I graduated high school

So yesterday I was listening to my Backstreet Boys pandora station and one of my ALL-TIME favorite songs (and yes I said one of my favorites) started playing. Wondering what song that was? Well, obviously it was this!

 Yes, I admit, I am a Hanson fan. Now before you go running away thinking that this post is all about boybands (although there might be a little more of that...IDK yet), bear with me for a minute. I need to tell you this little story. A few years ago my baby cousin Megan and I were going somewhere and I had my ipod jamming over the radio. MMMBop came on and I was dancing and singing like a fool while Megan sat there staring at me (which is normal haha). What she said next SHOCKED me! She said "Brittany, what IS this song???" I seriously flipped. How could she NOT KNOW what MMMBop was! Now, Megan is 5 years younger than me, so of course she didn't really know who Hanson was.

So, what is my point? Well my little cousin Megan is graduating high school tomorrow and this means it's been 5 years since I graduated high school!!! Insane! So here are some interesting things that happened the year I graduated in 2006.

Has it really been a year?

Last year on May 26 I started this blog so my then boyfriend would be able to stay up with everything going on since he was in New Orleans and I was here in SC. I can't believe it's been that long!! I've been TERRIBLE at keeping up with my blog, but I am just going to keep trying! So, what has happened in the past year? I went to NOLA for a second trip in the beginning of June. I thought it was great. But, then there was the giant breakup I had with Chip. That wasn't fun. A year later and I still occasionally get upset about it. It's a big change when you think you'll spend the rest of your life with someone and then they suddenly change their mind... It was hard! But, I have incredible family and friends that helped me through it. PLUS, because of him I  met some of the most amazing people ever! I absolutely consider them some of my best friends! SO, what else? I had a Twilight birthday party, one of my best friends since I was itty bitty got married, had my keys stolen at work, dressed up as Snooks for halloween, saw another friend (and Murray's godfather) get married, got to see Danielle and her sweet family before Christmas, Murray turned 2 which I never blogged about, we went to Universal Studios in Orlando and had SOO much fun and now here we are in May! My sweet little cousin is graduating from high school this week (It's been 5 years since I graduated!!), we're going to DC this weekend, and I already have my next New Orleans trip planned for August!

So, hopefully I can get this blog to be a regular thing for me again!! I miss blogging!!!

Just going to keep trying...

but I have been TERRIBLE about updating my blog!!! I really am going to try to keep up with it better! So about 3 weeks ago we (Murray, me and our friend Tamara) went and met some of my friends in Orlando. It was   a blast! We went to Universal Studios to the Wizarding World of Harry Potter. Now, you have to understand that I am a complete and true Twihard...I know (knew) NOTHING AT ALL about Harry Potter. I didn't have any interest in watching or reading the movies, so when Danielle asked me to go, i was just like sure I can just go and hang out with some awesome friends! So that was my plan, and if I had time to watch the movies before I went, ok. So Thursday night I had a class, but Murray, Tamara and myself left afterwards about 9pm. We drove through the night, which was interesting...it honestly wasn't a bad drive though. We got there about 5:30 AM and went to meet Danielle and her family at their hotel room. We decided to all get ready and go get breakfast (and COFFEE) before we headed to the park. Here are the two cuties of the morning...

When I say that these two love each other, I'm not kidding. Murray is completely lovesick for her Harper! Here's a group shot from day 1...
 It was pretty chilly that day!!! We had fun. We had lots of  Butterbeer and saw so much Harry Potter stuff...they had me convinced I needed to see the movies!!! That night our friends Kristen, Matt and their little boy Micah joined us. It was so fun getting to see everyone! We went to dinner and went to BED haha! I was exhausted by the end of Friday!!! Saturday we got up and went to breakfast again before the park. We headed to the Dr. Seuss part of the park and we rode some fun kiddo rides. 
This was me and my girly after the Cat in the hat ride...she loved it. During it, she looked at me and said "Mama WEEEE!" We went back to Harry Potter for a while and rode some more rides...it was really fun and the kids were so good!!!  It was a long day, but so fun!

I am JOYOUS that my house is getting cleaned. It is LONG overdue and I am so ready for it to be done! Lots of hard-work and sweat are going into it!

I am THRILLED that the weather has been beautiful!!! I am having a yard sale on Saturday and it is going to be a gorgeous day!

I am CHEERFUL because I am doing well in school! I made a 104 on my first test this semester, which was in my Marketing class.

I am HAPPY that Murray is such a good girl! Well, most of the time :).

I am EXCITED that I am going to the Harry Potter thing at Universal Studios in a few weeks with some great friends!!! YAY!

Do you have a raisin in your nose?

Saturday started out as a normal morning. Murray woke up early as usual and wanted to eat first thing. She always wants to eat as soon as she gets up, but I take her to the kitchen to get something and she refuses to eat it. Go figure. Anyways, we go into the kitchen and my mom came in their with us. She was going to the grocery store and was going to take Murray with her. As they left to go to the store, I decided to go back to bed for a little bit. Yay! Extra sleep! I don't know how long I was asleep, but suddenly I heard my mom and Murray bust through my front door. "Murray has a raisin in her nose" my mom said as she hurried to Murray's bedroom. I was really confused at this point. How did she have a raisin in her nose? Did we have raisins? Where am I???? Ok, so I jumped out of bed and ran into Murray's room. My mom was trying to suction Murray's nose but it was not working. She asked me if I had a flashlight and I went to look for one. Meanwhile, Mom took Murray into the bathroom and was trying to hold her down to suction it. I ran back with the flashlight so we could try and see where the raisin was. Murray was not happy about any of this. Seriously, if you had heard her screaming you would have thought we were beating her or something. So we looked with the flashlight and we couldn't see anything. I asked mom is she was sure that Murray put one up and there. She said "Brittany, it was a yogurt raisin! Melted yogurt was dripping from her nose and she was screaming grabbing it!" Ok, so now what? We couldn't see it, we couldn't suction it. I called the doctor to see what they wanted me to do. It took the answering service FOREVER to answer. Finally they put me through and the answering service told me a nurse would call me back. Mind you, the raisin was in the nose at 10, and it was about 10:30 ish. Mom called our friend who is a respiratory therapist to see if she had any suggestions. She called an ENT doctor friend of hers and we were going to meet him at 12. The nurse called me back after that, but I told them we were taking care of it. We hurried and got dressed because it takes 30 minutes to get to the place we were meeting the doctor. Murray was so fussy and tired and I know it was hurting her. We kept asking her if she put a raisin in her nose and she would say NOOOO. As we were driving we noticed the the raisin slowly kept coming down. We could see it now, but the doctor told us not to do anything that could push it further in her nose. We finally get to the office (and my mom works in the same building, just a different office) and my mom was going to go inside and get her long tweezers because it was literally at the end of her nose. My mom starts to get out of the car and Murray started screaming!!! And guess what? Out pops the raisin! We called the doctor before he got there so he didn't make a useless trip. Thank goodness it came out! I'm glad it didn't get stuck up there...Have your kids ever stuck something up their nose before???

I am blessed because my daughter is the most amazing person ever. She is so funny and sweet! Don't get me wrong, she has a terrible temper, but she's super sweet for the most part!

Murray's birthday party is going to be INCREDIBLE! I am so excited for it! I can't wait to post some pictures and show you guys all the stuff!

I feel productive with school right now. I am ahead in all my classwork and it feels great to not have to worry about it tomorrow on my free day with Murray!

I am elated that I get to see at least 2 of my friends from Speech on Thursday nights. We have classes close to each other, so we stop and say hey to each other! It's a good thing because I miss them!

I am happy that Grey's Anatomy is new tonight! YES!

The Princess and the Frog

When The Princess and the Frog first came out, Murray was too little to be interested in it. I honestly forgot about it for a while. Then, right before Christmas, my friend Danielle told me there was a talking alligator in it. I knew right then I had to get it for my alligator obsessed girl! She seriously has this crazy obsession for alligators. She has a stuffed one, two plastic ones, and alligator jammies. So, using my SWAGBUCKS, I ordered the movie from Amazon.com. I was excited to see it myself, so a few days after Christmas we watched it. The sweet girl didn't move a single time during the movie. It was a cute movie! It was cool seeing "old-timey" New Orleans. So, fast forward to present day. My child is now obsessed with this movie. She points to the tv and just says "alligator, alligator" over and over. Since Sunday, I think we have watched it about 6 times (not sit down and watch but it has to be on.) I think I have created a monster...at least she is cute:).

Back on the train!

Finally, I am back on this bloggy train! I know you guys missed me. We've had a few holidays since I last blogged. So, time to catch up.

First, Thanksgiving. Murray looked insanely cute on Thanksgiving! She was all decked out in her gymbo (what else, right?) For some reason I can't find a picture of her on my camera... I'll have to see if I can find some on my grandparent's camera later. It was somewhat of a warm day, so I had to take off her super cute fur vest so she wouldn't sweat to death. Megan and I tried to make a cake for Thanksgiving and it turned out to be a hot mess. Don't even ask for a picture of that haha! We made homemade marshmallow fondant. Who knew it would be that messy? It was fun, but boy it was terrible. Haha!

Wait did I miss Halloween too? Ok I just checked and I didn't post too many pictures! Well, time for that :). Murray was the cutest little 1950s girl for Halloween. I was Snooki ;). This is my hilarious, awesome, great speech class from last semester. They were so fun and we decided to have a Halloween party one night during class. You can tell that we all have a very fun personality :). Everyone wasn't in this picture. There was also an Edward Cullen and a computer nerd!
 Megan and I took Murray and Landon to a fall festival the night before Halloween. They are so cute together. Murray is such a flirt! Look at them golding hands! Neither one of them would look at the camera at the same time, so this is the best picture I could get. Aside from ones where she covered her eyes and then where she covered her ears. The little punk!
Kevin, Murray's godfather, got married the day before Halloween too. I only got a few pictures of it though. 
 Look at those handsome men! They all looked great! This was them hanging out before the wedding started. 

Me and my friend Jamin. We were really good friends in junior high, then he left. But, at the wedding he was there and we got to hang out. Fun times!


Me and my beautiful cousin Megan later that night when we took the kiddo's out. Love her!


Anyways, I have more to come about Christmas break later. That includes seeing my amazing friend Danielle and her wonderful family. So until then!
