The Great Car Key Fiasco
I've been a terrible blogger. I know. I'll try and do better.
I'm going to tell you all a story tonight.
Monday night I had to work. It was rainy and cold, but I love that weather so it was great. I walk into work and go to put my keys in the drawer where I always keep them. I opened the drawer and I thought I broke some glasses because they flew out at me... I still don't know what they were. Anyways, I placed my keys in the drawer and went about the rest of my night.
I go to leave at the end of the night and I grab the last set of keys in the drawer.I walk out to my car (in the pouring rain) and I go to unlock it. Mind you, I park at the end of the parking lot. I get to my car, but something was wrong. The keys weren't mine...ok no big deal! I was just going to walk back inside and get my keys. But wait, remember I said those were the last ones? Well, I was right. There were no other keys in the drawer. What could I have possibly done with them? Did I lock them in my car? Did I drop them somewhere? No. That couldn't be it! I remember putting them in the drawer!!!! Someone had to have taken them! I go back outside and wait for Paige to come get me since I can't get in my car. Did I mention that I thought my spare key was in my purse inside my car? Smart move.
Tuesday morning a friend text me saying she had a slimjim I could use to unlick my doors. The only problem is that my car has power locks, and apparently it's hard to use a slimjim on those. My friend David came to help us try and get it open. The slimjim wasn't working for us. A couple other people tried to help, but no luck. What was I going to do? Pop-A-Lock is expensive and I didn't want to call them! David decided to call a friend of his to see if he knew how to use the slimjim. He got there and tried to use it for a while, but yet again, no luck. Then he tried something else. He got an antenna and a screwdriver. Pop! It was open! Yay! Thank you David's friend. Now I had the task of finding the spare key.
My car is not neccessarily the cleanest car out there. It's just I am on the go a lot, so my things pile up in there. I was fairly certain the key was in my purse. I looked, and nope. No key. I looked in the other purse. STILL no key. I searched the car and there was no key to be found. Now what?
We thought my car was one that had to be programmed to get a new key. If that was the case, it was going to cost almost $400 to get one made. Seriously? I couldn't afford to do that! Well, it turns out that my car didn't have to be programmed, so we could just get a key made. That was still going to cost $47. Now that's a lot cheaper, but still it's a lot of money for ONE key. My dad went and got a key made... and take a guess at what they charged...$14!!! How awesome is that?!?!
I was still frustrated because I didn't have any of my other keys. I didn't have a house key, my grandparent's key, or Paige's key. At least I had my one key I suppose, I just really wanted MY keys back. Why would someone take them in the first place!!! Well, fastforward to about 9 pm Tuesday night. I was back at work (even though I spent the majority of my day in the OG parking lot) and I was getting ready to leave. I was cleaning up the bathrooms when someone told me someone needed to see me. I go to the front and a girl I work with had my keys in her hand. my mouth dropped to the floor. Did she really stand there and have my keys like it wasn't a big deal? It was a very big deal. She apologized and said she just realized that she had them. Seriously? 24 hours later and you just realize... Come on now.
Regardless, I am very thankful to have my keys back after a very stressful two days. I am so glad this week is almost over! :)

Yummy in my Tummy
My dad and my grandmother both had a birthday this week. In fact, today is my nanny's birthday. Happy Birthday Nanny! :) Anyways, I decided to make a carrot cake for my dad. This was the very first time I had attempted one, and I must say it was surprisingly easy. I got the recipe from Marzipan Mom and it was so delicious. She said it was the best carrot cake, and I believe she was right!!! I'll go ahead and give you the recipe here too.
5 ounces (1 cup) dark raisins
1 pound carrots to make 4 cups shredded, firmly packed
2 cups minus 2 tablespoons all-purpose flour
2 teaspoons double acting baking powder
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons cinnamon
1 tablespoon unsweetened cocoa powder
4 large or extra-large eggs
2 teaspoons vanilla extract
1 cup granulated sugar
1 cup dark brown sugar, firmly packed
1 1/4 cups vegetable oil
5 1/2 ounces walnuts, cut into medium-small pieces
Cream Cheese Icing, recipe follows
a handful of pecan halves, for garnish (I used walnuts to garnish with instead...)
Preheat the oven to 350 degrees F. Spray three 9-inch cake pans with cooking spray, line the bottoms with parchment, and spray the parchment.
Grate the carrots using a food processor (I used the disc with largest holes, but you can grate them more finely if desired) or a standing metal grater. Measure and set aside.
Sift together the flour, baking powder, baking soda, salt, cinnamon, and cocoa, and set aside.
In the bowl of an electric mixer, beat the eggs. Add the vanilla, both sugars, and oil, and mix until well combined. Add the dry ingredients and mix on low speed only until combined. Stir in the carrots, raisins, and nuts.
Divide the batter evenly among the three pans and use a spatula to even out the batter. Bake the pans for 35 to 40 minutes or until the tops just spring back when gently pressed with a fingertip and the cakes begin to pull away from the sides of the pan. Remove from the oven and let stand 2-3 minutes in the pans on a cooling rack. Run a small knife around the perimeter of the cake and invert the cakes onto a cooling rack and allow to cool completely. It is not necessary to remove the parchment from the bottoms of the cakes at this time.
Brush any stray crumbs from the sides of the cakes and transfer the cakes to the freezer, unwrapped, for at least an hour, or until cakes are firm enough to handle. If you wish to freeze the cakes longer, wrap the frozen layers in plastic wrap and return to the freezer until you are ready to frost the cake. Do not thaw the layers before icing.
When ready to ice the cake, prepare a large, flat cake plate by lining it with four strips of wax paper to make a square. This wax paper will catch any crumbs and icing while frosting the cake. Remove the parchment paper from the bottoms of the cakes. Place one cold and firm cake layer upside down on the plate. Spread a thin layer (2/3 cup) of the icing evenly over the cake. Cover with the second layer, also upside down. Spread another 2/3 cup icing over the second layer. Place the third layer on top, also upside down and spread the remaining icing over the top and sides of the cake. Remove the wax paper strips carefully. Garnish the cake with pecan halves. Refrigerate the cake for a few hours or for a day or two. Serve cold right from the refrigerator.
The icing was the best part to me. I LOVE a good cream cheese icing so I made a batch and a half. It was a good thing too, because I needed almost all of it for the cake.
16 ounces cream cheese, at room temperature
4 ounces unsalted butter, at room temperature
1 teaspoon vanilla extract
2 cups sifted confectioners' sugar
In the bowl of an electric mixer, beat the cheese and butter until soft and smooth. On low speed beat in the vanilla and sugar, and then on high speed beat for a few moments until smooth.
Once again I only had my phone to take a picture with, so they aren't great but you can see it at least. I am pretty much the world's worst cake icer, but I think i did a decent job!
Right now I have a pie cooling in the oven, so expect a blog about that later :)

Day 28!!! Only 2 more 30 Day Journal posts left!!! I have loved every minute of these posts. They were alot of fun. Maybe not for you guys, but for me at least :).
What's in my handbag? WELL. I have a ton of stuff in there. Typical things like a wallet, gum, pens. I have 3 bottles of hand sanatizer. Yes, I'm obsessed! I use it a lot. At church, especially after the fellowship time, I HAVE to go get some. I'm sure all the people that sit around me think I am rude, but GROSS. I do not want your germs on me!!!! Anyways... I have a diaper, some baby wipes, earrings, fingernail glue (haha), a Flip video camera, socks, a water bottle, and hair bands. I know it's alot and it's all pretty random things. That's me though :)

I know it's been a while since I posted about the journal. But alas, I will finish it this week. I promise. So wanna hear about my week? I'm not sure I can even remember everything, but I'll try!
Monday- Work day. I can't remember what else I did.
Tuesday- Murray and I made sugar cookies! It was fun and I think Murray loved it. We decorated them afterwards.
Wednesday- I had computer class. Murray and I went to my grandparents so that I could work on an excel project I had. I ended up having to go to the school library to finish it though. Class was short. Basically all we had to do was submit our projects. I opted to stay late and finish the project due tomorrow!!
Thursday- I made Maple Syrup Cookies! Yum! They were delicious! I took them to my Public Speaking class.
Friday- Murray and I took my mom to meet her friends because they went to Savannah for the weekend. We went back home and rested for a little while. Later we went and ran errands... well technically I guess it was more fun stuff than errands. We went to Whole Foods, the mall, and then to Paige's. I got Murray THE CUTEST OUTFIT at Gymboree.. it has owls on it. That night Paige, Haley (Ian's girlfriend), and her friend Sam, Murray, and I had a wing party! Yum. We watched Letters to Juliet too. It was pretty fun, but I think I went to sleep by like 11.
Saturday- GAMEDAY! We hung ot at Paige's for a little while. We went home and played for a while. Then we met Auntie T and May-May at the mall. Then we went to Longhorn for dinner and it was sooo good! Murray also got a super cute new Gamecock cheerleader outfit.
Sunday- We went to church on Sunday morning and that was pretty much our whole day!
I think I did pretty good to remember that much! :)

1. Starting tomorrow I am officially not working Friday nights any more! Yippee! This is a major reason to celebrate!! I have been working Friday nights FOREVER now and I am so glad to go to Monday and Tuesday nights!

3. I saw a picture of Dave Barnes' new Christmas album cover and I am stoked!!! Dave Barnes and Christmas music??? Yes, please!
4. I am thankful Paypal refunded the money that someone spent when my account got hacked this week.
5. I am super duper excited that the Gamecocks kicked Georgia's booty last weekend! We're #13 now! Woot Woot!

Because I know you all are soooo interested in what I did ALL day yesterday, I'll tell you :). Murray got me up around 7:30, so we played for a little bit and watched some Playhouse Disney. I made her french toast for breakfast. I FINALLY got it right! It was my third attempt at making it. I don't know why I had such trouble with it! She was so funny when she was watching me fix it. I was pouring a little syrup on the toast and she started saying "Mmmmmmm"! Haha. We came back to the bungalow and played for a while. I attempted to get her to nap and she refused, so again we played more :). Lunch time came and I fixed Mummy Dogs! They are so cute! It's hot dogs that are wrapped in crescent roll strips to look like mummy's.
I know you can't see it too well because I took the picture with my phone, but it gives you an idea! Anyways, moving on. After lunch I convinced her to take a nap! I took a shower and did my makeup. After her nap I got her ready and we went to my grandparents. She played there for a while. I went to work later that afternoon and was there until like 10:15 or so. I came home, ate chicken salad, and went to bed! Interesting day, right/ :)

I have mentioned Foodgawker and Weddinggawker before. Another I love is PoshTots. I wish I could afford the things on this site!!! The most beautiful baby things ever!!!
Day 23- I've mention before how much I love Dave Barnes and how funny I think he is (see Just A Little laugh). Whenever I need a laugh i just go watch one of his videos!

Remembering 9/11
I can't believe that tomorrow will be 9 years since this happened. I'm sure I could think of more than just 5 things I remember about this day, but I'm just going to tell about the day I remember. I don't think I've ever actually told this from my viewpoint that day. It's interesting to me to read how people felt that day and how even though I might have been in a group, we all had different emotions.
I can remember exactly where I was. I was in 8th grade at the time, sitting in Miss Holland's English class. I even remember what desk I was sitting in. It was the 3rd one on the 2nd row. We were talking about some story from literature and that's when Mr. Seiber (the principal) came over the loud speaker and announced that a plane had hit the first tower. I think at this point none of us really understood what was happeneing, but I remember the look on Miss Holland's face and I knew it was bad. We took a few minutes and prayed for what was going on, but we went back to work. I think about 20 minutes after we went back to work Mr. Seiber came back over the loud speaker to tell us that another plane hit the second tower. I remember thinking "Oh my gosh, what is happening". I remember going to my next class, but I have no clue what it was. At this point I was in shock about what was happening. We didn't stay in class but maybe 5 or 10 minutes and all of the jr./sr. high started going into the cafeteria. Teachers were setting radios up so we could listen to what was going on. Somehow a few people got a tv wired so we could watch the news. People were crying, sitting in shock, talking because they didn't know what else to do. Eventually we all moved into the gym that afternoon to keep watching what was going on. The only class I had the rest of the day was my Government/Economics class with Mr. Nix. We talked about how this was changing history and how it would affect our lives, our children's lives, and the world around us. I don't think at this point in time we really knew the impact this tragedy would have on all of our lives. I can't think of one person who doesn't know someone out there fighting for us or that has fought in the War Against Terror, or even indirectly by knowing someone who has/had a loved one there. That afternoon we were supposed to have a soccer game. I had my cheerleading uniform on is the only way I remember that. Since it was cancelled, we (my brother and I) went to my grandmother's house like we always did after school. We were glued to the tv, watching the reports, seeing the videos over and over again of those planes flying into the towers. Without even watching it now, I can remember so clearly what it looked like. That night I remember begging my mom to let me stay up and watch President Bush speak. I think this is the day that I truly became interested in what was happening in our country. I remember later seeing a picture of President Bush being told of the attacks and I still see that in my head when I think about this awful day.
When you think about tomorrow, remember those people who lost their lives and who willingly gave them to save ours. Think about the ones who are still out there fighting to make sure we stay safe. Think about the families who have loved ones out there right now, right this second. Think about the families who lost someone because of the horrible attack on our country.

Yesterday I found a little recipe for something called Boo Cups. They are simple, cute, and delicious!!! Perfect for Halloween!!!
What you'll need:
2 pkg. (3.9 oz. each) JELL-O Chocolate Instant Pudding
3-1/4 cups cold milk
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
20 OREO Cookies, crushed (about 2 cups), divided
30 Miniature semi-sweet chocolate chips
How to do it:
BEAT pudding mixes and milk in large bowl with whisk 2 min. Stir in half each of the COOL WHIP and cookie crumbs.
SPOON 1 Tbsp. of the remaining crumbs into each of 15 (6-oz.) plastic cups. Cover with layers of pudding mixture and remaining crumbs.
DROP remaining COOL WHIP by spoonfuls onto desserts to resemble ghosts. Add chocolate chips for the eyes.
These were so yummy!! Murray loved them too :)

Since I missed yesterday, I'll post two in one today! I guess it's a good thing I am posting a double one, because they are actually the same thing. I would have to say I am a pretty good cook. Not always, but more time than not my recipes turn out. I love looking up new recipes online and in cookbooks. Ok. When it comes to my wedding, I have lots and lots of plans and ideas!!! But, I'm not going to share most of them with you :). I don't want to give away all of my secrets!
I will say that I LOVE navy blue & fuschia for a spring/summer wedding. For a fall/winter wedding I Love purple & aqua. Both are absolutely beautiful, classy, and stylish! I want the men in suits, not tux's. I like a vintage feel, but I don't want my wedding to be super trendy. I want it to be unique without going overboard. I can picture my dress in my head, and it has lots of lace, flowers, some sparkle. Essentially, it has a little bit of everything! I want a birdcage veil. I could spend hours telling you all about the wedding of my dreams, but that could be because I love weddings in general. Guess it's a good thing I want to plan them! :)

Kitchen-
I think it will look something like this. I will have to have a huge kitchen because I love to cook so much. Maybe not quite to country, and slightly more mod, but I love this kitchen!
Living room-
I love love love the colors and cozy feel of this room!
Master bedroom- Apparently I am going to be able to do whatever I want to me bedroom and my husband isn't going to care lol. Actually, i like both of these.

This for sure!!!! :) Fit for a queen haha.
